The Story

Sourced from the funnel-shaped blossoms of the Ipomoea batatas vine across Southern agricultural fields, Sweet Potato honey is a genuine rarity, and for a simple reason: sweet potatoes are grown for their roots, flower sparsely in most US commercial production, and are lifted before any sustained bloom. Honey bees work the flowers low and early where they appear at all, which is why the crop is seldom offered as a single-varietal honey. What little is bottled is pale, a golden extra light amber, and milder than its autumn associations imply, since pale honeys as a rule carry gentler flavour than dark ones. A glucose-forward sugar balance and a low moisture range give it a rapid set, thickening to a smooth, dense spread in a cool pantry rather than staying liquid. Use it where that soft, faintly earthy sweetness is the point: on warm quick breads, over roasted squash, or stirred into black tea.
