This hybrid variety balances the robust winter/spring nectar flow of coastal Eucalyptus globulus canopies with the pristine summer pasture flows of Trifolium. Beekeepers must carefully time the introduction of supers to capture the cooling, oil-rich eucalyptus nectar just as the cleaner, high-sucrose clover flows begin, ensuring a natural dilution of the tree's heavy essential oils. The blend yields a medium amber honey with a standard, highly fluid table viscosity and a clean, lightweight mouthfeel. Because the clover component balances out the heavy, resinous compounds of the eucalyptus, the honey exhibits excellent solubility in cold liquids, making it an ideal choice for sweetening iced black teas without clouding or separating.
