The open, structurally exposed flowers produce a highly fluid nectar that must be gathered quickly before the extreme desert sun evaporates the moisture content and hardens the sugars. This varietal contains a high concentration of complex fructooligosaccharides, yielding a thin, highly fluid syrup body that exhibits a low crystallization rate. This low viscosity allows it to dissolve instantly into cold liquids, making it an excellent technical tool for sweetening craft cocktails, clear cold infusions, and low-viscosity dressings without leaving sugar deposits.
